One of our favorite meals is spaghetti and meatballs (or “mesquetti, as the kids call it!) Although I haven’t mastered a sauce from scratch yet, I have a quick version that the kiddos love. I usually try to prep the meatballs the night before but even if I don’t have time, I can usually do it after I get home from work and it’s no more than an hour and a half prep and cook time (only an hour when everything is prepped though).
Preheat oven to 350 degrees.
Ingredients:
3 pounds of ground beef or turkey
1 egg
chopped onions, celery, carrots, and green bell pepper
Onion powder
Garlic powder
Tony Chacheres Creole Seasoning (FAV!)
Italian bread crumbs
Worchestershire sauce
Three jars of Newman’s Own Tomato and Basil sauce
PAM cooking spray
Your noodles of choice
Combine the ground meat, egg, seasonings, peppers, onions and veggies all into a bowl and grind together with both hands until well integrated. I usually roll the meatballs to about 2 inches each one. Spray baking sheet with Pam or coating of your choice. Place meatballs on greased sheet and bake for 45-60 minutes or until evenly brown. Heat tomato sauce and add meatballs- let simmer for 10 minutes. Boil your favorite noodles, add meatballs and sauce, and serve! I usually throw in yummy garlic breadsticks as well. Enjoy!
